Tuber Melanosporum

It is a fungus that is found underground, hypogeous, and lives in symbiosis with the roots of holm oaks, oaks and hazel trees mainly.

Tuber melanosporum is the scientific name for the truffle known as the black truffle, Périgord truffle, or winter truffle. It is a highly prized gastronomic truffle due to its intense aroma and flavor. It can still be found growing wild, but it can also be cultivated in plantations using mycorrhizal plants.

The collection of Tuber melanosporum takes place approximately from November to March, and since it is found underground, the search is done with dogs that detect them by their scent.
