Tuber Aestivum

It is a fungus that is found underground, hypogeous, and lives in symbiosis with the roots of holm oaks, oaks and hazel trees mainly.

Tuber aestivum is the scientific name for the truffle known as the summer truffle or St. John's truffle. It is a truffle of gastronomic value, but less prized than the black winter truffle or Tuber melanosporum. It is still found growing wild, but can also be cultivated in plantations with mycorrhizal plants.

The harvesting of Tuber aestivum takes place approximately from June to August, and since it is found underground, the search is done with dogs that detect them by their scent.
