The Black Truffle of Teruel is a special ingredient that each cook can use to their liking (except freezing it, that's a sin). Today we want to show you a recipe that will not leave anyone indifferent, as it takes us to Tuscany, the most traditional Italy, with a simple recipe and seasonal products.
We are going to prepare a typical Italian dish, beetroot risotto, to which we will add Gorgonzola cream and our Tuber Melanosporum from Teruel , which will make this dish unforgettable.
Beetroot risotto, gorgonzola cream and truffle
Ingredients for 2 people :
2 raw beets
160g Vialone Nano rice
1 liter vegetable broth
1 shallot
60 ml dry white wine
60g Parmigiano Reggiano
40g butter
50g gorgonzola cheese
50 ml of cream
Black Truffle from Teruel
Elaboration:
- We'll start with the gorgonzola cream. Put the cream and cheese in a saucepan and heat gently until combined. Season with salt and pepper, blend until smooth, and set aside.
- We roast the thoroughly cleaned beets in an ovenproof dish on a layer of coarse salt and bake for 1 hour at 200ºC. We let them cool, peel them, and cut them into cubes.
- Finely chop the shallot and sauté it in a saucepan with half the butter. Add the rice and sauté until it begins to turn translucent. Add the wine and let it evaporate.
- Add the beetroot and a couple of ladles of stock, which you will have heated beforehand, and stir continuously.
- As the broth evaporates, continue adding ladles. Repeat this process for about 18 minutes.
- We take the risotto off the heat, add the rest of the butter and 3/4 of the Parmesan cheese.
- We serve the risotto and finish with a few lines of gorgonzola cream, some shavings of black truffle and the rest of the parmesan.
Tips :
You can use cooked beets, but the flavor is better when they are roasted.
If you can't find Vialone Nano rice, you can use other varieties of risotto rice.
