Today we're going to give you a recipe with Black Truffle from Teruel that has caused a stir on Instagram.
The Black Truffle is the diamond of gastronomy, a delicacy for the most demanding palates, in the kitchens of many homes and many professional chefs.
Knowing how to prepare truffle-infused products can lead your guests to culinary heaven. There are many ways to prepare this product: it can be used as a sauce, grated directly, or used to flavor oils, eggs, or even rice. It can also be used to flavor alcoholic beverages; we'll discuss this topic in another post.
The Perigord or Perigueux sauce with which we will prepare the dish is a typical French sauce that has two fundamental ingredients: Tuber melanosporum and mushrooms.
Quail in Perigord sauce with potato spheres and black truffle
Ingredients for 2 people:
2 whole quails
25g butter
25g shallots
25g flour
250 ml beef broth
Grated black truffle
75g potato
75 ml cream
1 g gluconolactate
500 ml alginate bath
Preparation:
- We season the quail and sear them in a pan with a drizzle of oil.
- Preheat the oven to 250ºC and roast the quail for 15 minutes.
- Meanwhile, in a saucepan, sauté the shallot in butter, add the flour and make a roux, add the hot stock and let the sauce thicken.
- Add the grated black truffle and remove from the heat to allow the flavors to meld. Adjust the seasoning with salt and set aside.
- Boil the potatoes in their skins until tender. Peel and mash with the cream and gluconolactone.
- Using the previous mixture, we prepared the spheres in the alginate bath and reserved them in warm oil.
- We present the quail with the potato spheres, drizzle with sauce, and finish by grating a little more truffle on top.
Tips:
For the sauce, it's very important to use a well-concentrated beef broth, as this will be the base of our recipe.
Sometimes preserved truffles are used in this recipe, but I recommend using fresh truffles as the result is incomparable. To get fresh truffles, click here.
