World producer of Black Truffles

The Sierra Gudar-Javalambre is the main producer of black truffles worldwide; it is considered that 80% of the black truffles that are marketed both nationally and internationally come from the Teruel area.

Aragon consolidates its position as the main producer compared to other autonomous communities, and Teruel will be the main capital leading this ranking with 45 tons of provincial production, followed by Huesca and Zaragoza with 15 and 1.5 tons respectively.

Teruel boasts over 7,500 hectares dedicated to mushroom cultivation, followed by Huesca with 1,600 and Zaragoza with 160 hectares. This is due to the ideal terrain and climate in the Teruel region. There are even plantations in Australia and Argentina, with lower yields and at different times of the year, but also achieving very good results.

This product is currently consumed in the USA, Japan, the United Arab Emirates, and of course, one of the largest consumers of this delicacy is France, followed by Italy. Spain also consumes it, but not in the same quantities as the countries mentioned above.

In recent years, truffle plantations have been booming; much has been and continues to be planted. However, without specific care and climatic conditions, the desired yield will not be achieved. Regarding wild truffles , the state of the forests is also a problem. The lack of firewood collection is a significant factor, as it effectively closes off the forest, making it much more difficult to access areas where wild truffles may be present.

A small percentage of truffles are wild; now the vast majority of truffles come from plantations with mycorrhizal plants , which are at their peak at approximately 8 years old, and their production viability extends to approximately 20 years.
