The Graus Truffle Market has a history as rich as its aroma. Its origins date back to 1947 , when JoaquĂn Vilas and the Mur brothers, from La Puebla de Fantova, began buying truffles from local residents, recognizing their gastronomic and economic value.
In those early years, the market was held at the Hotel Lleida in Graus , coinciding with the weekly Monday market, authorized in 1588 by King Philip II. During the decades from 1947 to 1975, the so-called "Golden Years of the Black Truffle in Graus" were experienced , a period of splendor in which collectors, buyers and canneries gave life to a trade that even went so far as to export truffles to France.
The negotiations began on Monday afternoons and stretched into the early hours of Tuesday morning, in an atmosphere where secrecy and discretion were essential to the business. No one wanted to reveal the origin of their best truffle orchards.
Over time, the tradition evolved. In the late 1980s and 1990s, modern truffle cultivation began to take shape with the introduction of plants mycorrhized with Tuber melanosporum , and in 2007 the market moved to its current location in the Graus Cultural Center , where it is held every Saturday during the winter.
