How to preserve fresh truffles?

The first thing you should know is that it is best to consume it within a short period of time; if you keep it in optimal conditions, this time can be extended, but it will lose some of its characteristics.

Let's get to it, you should keep in mind:

  • To preserve a black truffle, you must first clean it under running water with a soft-bristled brush to remove any dirt, being careful not to break it. Afterward, dry it with paper towels. Here are two options:
  • If you're going to use it soon: Store it in the refrigerator in a sealed glass container lined with paper towels to absorb any moisture. Change the paper towels periodically, and you can even leave the container open for a moment to allow it to air out. Another trick is to add rice to the container; it will also absorb moisture and take on the aroma and flavor.
  • If you prefer to store it to enjoy year-round, you should put it in the freezer. Wrap the truffle in cling film, and with each use, try not to leave it out for too long to prevent it from thawing. Store it near foods that don't give off strong odors, such as fish, to avoid any clashing.
