Get the most out of your Black Truffle

January 15, 2021

Hello again truffle lovers! Today we bring you important information that will help you optimally preserve truffles, and of course, get the most out of them.

First of all, congratulations if you've acquired the prized Tuber Melanosporum . Your palate, and that of your guests, is about to savor one of the most exquisite delicacies of haute cuisine . It's a food with unique characteristics in terms of aroma and flavor, and therefore, its preservation will also be different.

What should you do when you receive a Black Truffle? Keep in mind that the Black Truffle is a fungus, and therefore, leaving it in the refrigerator for too long could diminish its qualities. We recommend using it fresh and not freezing it. It will keep for a maximum of 15 days in the refrigerator after purchase. Remember that truffles lose moisture and weight when harvested and removed from their habitat, so it's best to avoid intermediaries. At Sentidos Truferos, we guarantee to avoid this step, thus considerably reducing the time from when it's found in the ground until it reaches your kitchen . The truffle will not have lost quality or moisture because it is cleaned and shipped directly. It's that simple: we avoid intermediaries to give you a product with a full quality guarantee.

Also, you should know that truffle season runs from mid-November to mid-March, so if you buy a truffle out of season, it's very likely that it won't be a Tuber Melanosporum or it will have been preserved. However, if the truffle is a summer truffle, a white truffle, or any other type, don't worry, it will still work in your recipes, although it won't have that characteristic flavor and aroma.

We also want to inform you that you don't need to fill your plates with grated or sliced truffle, as its intense flavor means that small quantities are enough; you can buy a 40g truffle and use it to enhance more than 8 dishes.

As a general rule, the truffle will be plated with the finished dish, unless it has been incorporated into croquettes, cannelloni, etc., but prolonged cooking times should be avoided as much as possible.

How to store it? When you receive the truffle from this village in Teruel , make sure it's clean. At Sentidos Truferos, we also guarantee you won't find any dirt on them, as they undergo a thorough cleaning process. After that, wrap it in absorbent paper, then place it in a glass jar and refrigerate. You'll need to change the paper every so often (every day or two) as it will absorb the moisture released by the truffle.

The perfect place to store it in the refrigerator is at the bottom, as the temperature there will not be as extreme as at the top.

And finally, you can use it however you prefer. In our recipes section, you'll find different dishes to prepare in a simple and quick way. But don't forget this last point: when you take it out of the refrigerator, leave it for a moment before using it, because when it warms up to room temperature, its smell and flavor will be more intense .

We hope we have answered your questions, see you soon at Sentidos Truferos.
